- 2 tablespoons extra-virgin olive oil (divided)

- 1/2 cup finely chopped red onion
- 1/2 cup freshly grated Parmesan (plus more for garnishing)
- 1/4 teaspoon black pepper
- 1/2 teaspoon kosher salt
- 1/8 teaspoon red pepper flakes
- 1 teaspoon minced garlic
- 2 tablespoons tomato paste
- 1/4 cup fresh basil leaves (tightly packed)
- 2 slices of whole wheat sandwich bread
